Leadville 100 was not as I planned. I had a fall Leadville 100 was not as I planned. I had a fall that put me an hour behind, and by the time I hit the turnaround, I had 15 minutes to spare. I decided I would not make it back over hope pass before cutoff so I cut myself. I am super disappointed but I will be back next year!!! I did get to meet @dan_churchill and he rocked his 100! From the pictures you can see it takes a crew and they were amazing keeping me going!!

I do this all the time with my fruit, and it lasts for weeks!! - little bit of baking soda - little bit of vinegar - cover with water - soak for 5 minutes - drain and pat dry with a towel - store in a container with a paper towel on the bottom! 5 ingredient cookies: 1 cooked sweet potato 1 tbsp 5 ingredient cookies: 1 cooked sweet potato 1 tbsp peanut butter 1 1/4 cups rolled oats 1 soft banana 1/2 cup dark chocolate chips Cook sweet potato and mix all ingredients, then roll into balls and flatten. Cook at 400° for 15 minutes! So Good!!! Tip!! Let sweet potato cool before mixing, was not supposed to be melted chocolate, but still tastes great!! . . . . #healthycookies #plantbased #lovecooking
