Mini Cornbread Muffins

Ingredients
  

  • 1 cup Whole wheat flour
  • 1 cup Cornmeal
  • 2 tsp baking powder
  • 1 pinch salt
  • 1 cup milk I used almond milk
  • 1 cup cottage cheese
  • ¼ cup olive oil
  • 2 large eggs
  • 2 tsp honey or maple syrup

Instructions
 

  • Preheat oven to 355°. Spray a muffin pan or mini loaf pan with oil
  • In a large bowl, whisk flour, cornmeal, baking powder and salt together.
  • In a small bowl, combine milk, cottage cheese, oil, eggs and honey. Whisk well and add to dry ingredients. Stir to combine
  • Divide batter evenly between loaf/muffin tins and bake for 18-20 minutes or until inserted toothpick comes out clean and golden on top. Serve Warm!
