Easy Overnight Oats

Blueberry Lemon Muffin Overnight Oats

This is one version, but can make many versions with the first basic ingredients.

Ingredients
  

Base Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup milk of choice
  • 1/4 cup greek yogurt (Plain)
  • 1 tbsp chia seeds
  • 1 tbsp sweetener (I use honey)
  • 1/4 tsp vanilla extract

Blueberry Lemon Muffin ingredients

  • 1/4 cup fresh or frozen blueberries I think frozen works best
  • 1 tsp lemon zest
  • 2 tsp honey
  • pinch of salt

Instructions
 

  • Mix all ingredients and pour into a mason jar and let sit overnight in the refrigerator.

There are many variations you can make starting with the base ingredients:

  1. Peanut butter and jelly:
    1. 1 tbsp strawberry jam
    2. 1 tbs creamy peanut butter
    3. 1/2 cup sliced strawberries
    4. 2 tbs crushed peanuts
  2. Banana Nutella:
    1. 1/2 banana sliced
    2. 1 tbsp Nutella
    3. 1 tbsp crushed hazelnuts
    4. 1 tbsp chocolate chips.
  3. Almond Joy:
    1. 1/4 cup shredded coconut
    2. 1 tbsp almonds chopped
    3. 1 tbsp chocolate chips
    4. 2 tsp maple syrup
