Coleslaw (Healthy)
I had leftover cabbage so decided to make something with ingredients I have on hand.
Equipment
- 2 bowls
Ingredients
- 6 cups green cabbage Slaw
- 2 cups red cabbage Slaw
- 1 cup shredded carrots Slaw
- 1/2 cup Greek Yogurt (Plain)
- 1/4 cup olive oil
- 2 tbsp Apple cider vinegar
- 1 tbsp maple syrup (or honey)
- 1 tsp garlic clove minced
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- In a small bowl, mix all the ingredients for the dressing (olive oil, vinegar, syrup, garlic, yogurt, salt, and pepper)
- In another bowl mix the cabbage and carrots.
- Pour the dressing over the cabbage mixture and stir until well covered.
- Refrigerate for up to 4 hours for best results.
