Coleslaw (Healthy)
I had leftover cabbage so decided to make something with ingredients I have on hand.

- 6 cups green cabbage Slaw
- 2 cups red cabbage Slaw
- 1 cup shredded carrots Slaw
- 1/2 cup Greek Yogurt (Plain)
- 1/4 cup olive oil
- 2 tbsp Apple cider vinegar
- 1 tbsp maple syrup (or honey)
- 1 tsp garlic clove minced
- 1/2 tsp salt
- 1/4 tsp black pepper
In a small bowl, mix all the ingredients for the dressing (olive oil, vinegar, syrup, garlic, yogurt, salt, and pepper)
In another bowl mix the cabbage and carrots.
Pour the dressing over the cabbage mixture and stir until well covered.
Refrigerate for up to 4 hours for best results.
