Cinnamon Vanilla Chickpea Brownies

I absolutely love this recipe!  Who would have thought that Chickpea and Brownies would be in the same title.  I also love the statement of healthy yummy dessert!  One more thing, they are incredibly easy to make!  You simply throw al the ingredient in the blender, then pour into your pan and top with whatever you want and pop them in the oven!  You have to try them, you will not regret it and hopefully you will love them as much as me!!

Cinnamon Vanilla Chickpea Brownies

  • Blender or Food Processor

Ingredients
  

  • 15 oz Can chickpeas (rinsed and drained)
  • 1/2 Cup Cashew butter I used Natural creamy peanut butter
  • 1/4 Cup Gourmet Granola Cinnamon Vanilla Granola
  • 2/3 Cup Coconut Sugar You can use regular sugar
  • 1/4 Cup Maple Syrup
  • 1 1/2 Tbsp Cinnamon
  • 1 tsp Vanilla extract
  • 1/2 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1/4 tsp salt

Instructions
 

  • Throw all ingredients into a food processor or blender and mix until smooth. Pour into a greased pan, top with your preference of toppings and pop into the oven!
  • Bake in 350° oven for 30 minutes
  • Let cool, then cut into bars and serve

Notes

Add various toppings.  I added some dark chocolate chips, coconut and a little more granola prior to cooking.
