Cinnamon Vanilla Chickpea Brownies

Equipment

  • Blender or Food Processor

Ingredients
  

  • 15 oz Can chickpeas (rinsed and drained)
  • 1/2 Cup Cashew butter I used Natural creamy peanut butter
  • 1/4 Cup Gourmet Granola Cinnamon Vanilla Granola
  • 2/3 Cup Coconut Sugar You can use regular sugar
  • 1/4 Cup Maple Syrup
  • 1 1/2 Tbsp Cinnamon
  • 1 tsp Vanilla extract
  • 1/2 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1/4 tsp salt

Instructions
 

  • Throw all ingredients into a food processor or blender and mix until smooth. Pour into a greased pan, top with your preference of toppings and pop into the oven!
  • Bake in 350° oven for 30 minutes
  • Let cool, then cut into bars and serve

Notes

Add various toppings.  I added some dark chocolate chips, coconut and a little more granola prior to cooking.
