Chocolate & Peanut Granola Protein Bar
Yummy protein bar
Ingredients
- 1¾ cup Rolled oats (Or brown rice flakes or quinoa flakes)
- ¾ cup vanilla protein powder
- ¼ tsp salt
- 1 cup pitted dates (soaked in boiled water for 10 minutes) about 5½ oz.
- ½ cup crunchy peanut butter
- 1 cup 70% dark chocolate melts about 5½ oz
- ¼ cup hazelnuts (chopped) I used almonds
Instructions
- Grease or spray a 8 inch square pan with oil
- Process (blend), oats, protein powder, and salt together into a fine crumb
- Drain dates (reserve some of the water). Add dates to processor and blend until well combined. (I added to oat mixture and processed all together)
- Transfer dough to a bowl and mix peanut butter through by hand. Dough should be like cookie dough so may need to add some of the date water.
- Add to pan, pressing mixture into it. Spread out evenly using a large spatula and place in freezer while you prepare chocolate.
- Melt chocolate in microwave in 30 second intervals (or can do over boiling water in a pan). When melted pour over the mixture in pan and spread evenly.
- Spread nuts over top and refrigerate.
- Once they have hardened, cut into 16 pieces.
- Can store in refrigerator for a week or freezer for up to 3 months.
