Carrot Cake Overnight Oats

Overnight oats easy, healthy and taste great!

Ingredients
  

  • 4 pitted medjool dates
  • 1 cup milk I use almond milk
  • cup rolled oats
  • cup vanilla protein powder
  • 1 tsp pumpkin pie spice I use nutmeg/cinnamon/ginger/cloves
  • 2 carrots (medium) finely grated I buy bag of shredded

To Serve

  • 4 tbsp Greek yogurt I use vanilla greek yogurt
  • 2 oz walnuts (chopped)
  • 2 tsp honey or maple syrup I use honey

Instructions
 

  • Place dates in a small bowl and cover with boiling water, let sit for 10 minutes then drain water.
  • All the rest I pour directly into the blender - dates, milk, oats, protein powder, spices, and carrots.
  • blend until almost smooth but still a little bit of texture.
  • divide between bowls and refrigerate for at least 2 hours or overnight.
  • In the morning, top with yogurt, walnuts, and drizzle honey over top, eat and enjoy!
