I had leftover cabbage so decided to make something with ingredients I have on hand.

Equipment

  • 2 bowls

Ingredients
  

  • 6 cups green cabbage Slaw
  • 2 cups red cabbage Slaw
  • 1 cup shredded carrots Slaw
  • 1/2 cup Greek Yogurt (Plain)
  • 1/4 cup olive oil
  • 2 tbsp Apple cider vinegar
  • 1 tbsp maple syrup (or honey)
  • 1 tsp garlic clove minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • In a small bowl, mix all the ingredients for the dressing (olive oil, vinegar, syrup, garlic, yogurt, salt, and pepper)
  • In another bowl mix the cabbage and carrots.
  • Pour the dressing over the cabbage mixture and stir until well covered.
  • Refrigerate for up to 4 hours for best results.
