Mini Cornbread Muffins
Ingredients
- 1 cup Whole wheat flour
- 1 cup Cornmeal
- 2 tsp baking powder
- 1 pinch salt
- 1 cup milk I used almond milk
- 1 cup cottage cheese
- ¼ cup olive oil
- 2 large eggs
- 2 tsp honey or maple syrup
Instructions
- Preheat oven to 355°. Spray a muffin pan or mini loaf pan with oil
- In a large bowl, whisk flour, cornmeal, baking powder and salt together.
- In a small bowl, combine milk, cottage cheese, oil, eggs and honey. Whisk well and add to dry ingredients. Stir to combine
- Divide batter evenly between loaf/muffin tins and bake for 18-20 minutes or until inserted toothpick comes out clean and golden on top. Serve Warm!
