Carrot Cake Overnight Oats
Overnight oats easy, healthy and taste great!

- 4 pitted medjool dates
- 1 cup milk I use almond milk
- ⅔ cup rolled oats
- ⅔ cup vanilla protein powder
- 1 tsp pumpkin pie spice I use nutmeg/cinnamon/ginger/cloves
- 2 carrots (medium) finely grated I buy bag of shredded
To Serve
- 4 tbsp Greek yogurt I use vanilla greek yogurt
- 2 oz walnuts (chopped)
- 2 tsp honey or maple syrup I use honey
Place dates in a small bowl and cover with boiling water, let sit for 10 minutes then drain water.
All the rest I pour directly into the blender - dates, milk, oats, protein powder, spices, and carrots.
blend until almost smooth but still a little bit of texture.
divide between bowls and refrigerate for at least 2 hours or overnight.
In the morning, top with yogurt, walnuts, and drizzle honey over top, eat and enjoy!
