1/4cup2 1/2 oz Greek yogurtI use vanilla Greek yogurt
2TbspCottage Cheese
2TbspRolled oats
1tspHoneycan use Maple syrup instead
1tspVanilla extract
1tspshredded coconutI use unsweetened
1/2medbanana
1/4cupfresh or frozen raspberriesI use frozen mixed berries (let thaw overnight)
Instructions
Blend yogurt, cottage cheese, honey and vanilla until smooth.
Add oats and half the coconut to yogurt mixture and stir together. Refrigerate for 15 minutes (or overnight) - I definitely would do overnight.
Place half the oat mixture into a small jar, add banana and half the raspberries. Add remaining oat mixture and top with remaining raspberries and coconut to serve.
Notes
I usually make about 4 servings and have for other members of family or for a few meals or snack.
