Mango Salsa
This is amazing and easy!
Prep Time 20 minutes mins
- 1 large Mango (peeled, seeded and chopped) I cheat and used frozen chunked mango that I thaw in microwave.
- 1 large tomato (seeded and chopped) can also use can of diced tomatoes
- 1 small cucumber chopped
- 2 Tbsp fresh cilantro chopped
- 1 pepper Jalapeno chopped and seeded
- 1 onion thinly sliced green onion
- 1 Tbsp lime juice
In a large bowl combine mango, tomato, cucumber, cilantro, jalapeno, green onion and lime juice.
cover and refrigerate until ready to serve.
It tastes better the more it marinates in the refrigerator.
You can also put it in a blender for a quick second if you don't like it chunky.
