Overnight Oats

My favorite breakfast!!!

Banana and Raspberry Overnight Oats

Delicious, easy to make breakfast the night before.

Ingredients
  

  • 1/4 cup 2 1/2 oz Greek yogurt I use vanilla Greek yogurt
  • 2 Tbsp Cottage Cheese
  • 2 Tbsp Rolled oats
  • 1 tsp Honey can use Maple syrup instead
  • 1 tsp Vanilla extract
  • 1 tsp shredded coconut I use unsweetened
  • 1/2 med banana
  • 1/4 cup fresh or frozen raspberries I use frozen mixed berries (let thaw overnight)

Instructions
 

  • Blend yogurt, cottage cheese, honey and vanilla until smooth.
  • Add oats and half the coconut to yogurt mixture and stir together. Refrigerate for 15 minutes (or overnight) - I definitely would do overnight.
  • Place half the oat mixture into a small jar, add banana and half the raspberries. Add remaining oat mixture and top with remaining raspberries and coconut to serve.

Notes

I usually make about 4 servings and have for other members of family or for a few meals or snack.
